In Burgundy, every vintage tells a story. But the 2025 vintage has something special: it was a novel with twists and turns, climatic tensions, difficult choices, and, ultimately, a promise of greatness.

A Vintage That Breaks the Rules

Tradition dictates that vintages ending in "5" are sun-drenched. 2025 broke the rule.
Everything seemed calm until August, when the tranquility gave way to chaos: heatwaves, violent thunderstorms, hail, and sudden rains. A wild climate that challenged every prediction.

When, at the end of August, the grapes reached maturity, the unstable forecasts left no room for optimism.

The harvest began on August 27th, with a dual strategy: manual and mechanical harvesting, to save precious time. The excessive rain did not increase the yield; instead, it weakened the berries, increased the risk of rot, and put every decision under pressure.

But precision in pressing made the difference: only the best juices were kept, in a meticulous process that now moves to the cellar, where the elevage promises to be decisive.


A Classic Vintage to Be Accompanied with Patience

2025 is shaping up to be a classic Burgundy, balanced between tension and freshness.
One of those vintages that, if well-accompanied, can reveal great purity and aging potential. It will be the work in the cellar that brings out the best.


A New Cellar, a New Heart

2025 was also the year of the inauguration of a new cellar, finally living up to the Lavallée dream.
Reopened after 20 years of silence, it now houses over 100 barriques, illuminated by a new light. This is where future vintages will take shape: a vibrant space, designed to preserve and accompany each cuvée with artisanal care.
