A young face of Burgundy: respect for the soil and contemporary vision

In northern Burgundy, between the hills of Auxerrois and the mineral plots of Chablis, Clément Lavallée is one of the most interesting names of the new generation.

The adventure of Vignoble des 2 Vallées began in 1987, when Clément's father started his winegrowing business. In 2016, his sons joined the company, first the elder brother, then Clément in 2018. In 2019, Clément created his independent structure, with 1.6 hectares of Chablis. Today the company manages 14.10 hectares divided between Chablis, Saint-Bris, Bourgogne Côtes d’Auxerre red and white.

Work Method

The philosophy is clear: few hectares, zero excesses, maximum care. No chemical weeding, no insecticides, very few treatments. Cultivation is light, using small, tracked tractors to avoid soil compaction. Harvesting takes place at night or at dawn to ensure fresh and unoxidized grapes.

In the cellar, Clément limits interventions to a minimum: no selected yeasts, no additives other than minimal doses of SO2, and gravity is used to avoid stressing the musts. White wines ferment and age in old barriques for 12 months; the Chablis single vineyard wines then continue in steel tanks for up to 20 months. Red wines remain 24 months in wood and are not filtered.

The wine profiles

Lavallée's stylistic signature is clear: pure wines, without make-up, where acidity, structure and natural salinity combine distinctly. The white versions show freshness and saline tension, while the reds stand out for their aromatic depth and tannic finesse. Each cuvée has a precise identity, the result of observation, rigor and respect.

Each bottle is an authentic fragment of Burgundy: born of the soil, of time, and of hands that listen more than they intervene.
