Domaine Saint-Georges d'Ibry

A family story of sunshine and Mediterranean vines

In the heart of Hérault, between Pézenas and Béziers, a few kilometers from the sea, Domaine Saint-Georges d'Ibry has its roots in over six generations of winemakers. Since 1860, the Ibry family has passionately cultivated this 70-hectare estate, now led by Michel, Marianne, and Jean-Philippe Cros, in a perfect balance of tradition, innovation, and vision.

A sunny and complex land

We are in the IGP Côtes de Thongue area, on ancient terraces, limestone soils with fossil marl and marine sediments. This mosaic of terroirs allows the expression of 14 grape varieties, including Chardonnay, Viognier, Floréal, Syrah, Grenache, Marselan, Merlot and Carignan. Variety is a richness, managed with care and passion to create 23 distinct white, red and rosé cuvées.

Sustainable Viticulture and Modern Identity

The Domaine operates with respect for the environment according to Terra Vitis and HVE (Haute Valeur Environnementale) specifications. The introduction of Floréal, a disease-resistant grape variety, and the renewal of 27 hectares in just five years demonstrate constant dynamism. Every detail matters: from high trellising for light, to night harvesting, to the selection of musts.
