What exactly is Champagne?
Champagne is a unique sparkling wine in the world. It is produced with three main grape varieties, but the surprising fact is that two out of three of these are black-skinned grapes! We are talking about Pinot Noir, Pinot Meunier, and Chardonnay, the only white-skinned grape variety.
But if the majority of grapes are black, why is Champagne light in color? Because during vinification, the skin — where the color is found — is immediately separated from the juice. This way, even from black grapes, a brilliant and golden wine is obtained.

How the magic of bubbles is born: the Champenoise method
The true signature of Champagne is its second fermentation in the bottle, called the Champenoise method. After the first fermentation of the base wine, yeasts and sugars are added, and the bottle is sealed. At this point, inside, the magic begins: the yeasts transform sugar into alcohol and carbon dioxide, creating the famous bubbles. The wine then rests on its lees for months, or even years, developing complex aromas and refined elegance.
The different souls of Champagne
The Champagne region is divided into different zones, each with unique characteristics:
- The Côte des Blancs, the realm of Chardonnay, offers elegant and fresh wines.
- The Montagne de Reims, dominated by Pinot Noir, provides structure and power.
- The Vallée de la Marne, famous for Pinot Meunier, fruity and generous.
- The Côte des Bar, an emerging area, produces lively and surprising Champagnes.
What does "Grand Cru" mean?
The term Grand Cru indicates vineyards located in the most prestigious villages of Champagne, specifically in 17 selected villages, recognized for the exceptional quality of their grapes. A Grand Cru guarantees character and depth in the glass: it is the Champagne of connoisseurs.
